Cooking in crazy advanced- Sour vide+Molecular Gastronomy+Liquid Nitrogen drinks with safety steps

Are you boring with your normal cooking method! Caution : This is not the kids of cooking methods. please take alert with the chemical utensil and use the protective glasses to provide eyes and protective gloves to preserve and caution to reserve with the appropriate advice first. 


Sour Vide Oxtail Stock 

Beef bone, 200g  

Neutral oil 50g 

Those of upper ingredients goes with pan fry bones until golden.

Oxtail with thin sliced beef on a band saw 775g 

Roasted with 190 degree to oven until golden around 30minutes. Remove excess fat, let it cool for reserve.

Water 500g 

Red wine 100g

Shredded Carrots in slices 50g

Shredded Onions in slices 50g

Shredded Celery in slices 20g

Shredded Leeks in slices 20g

Dry Red port wine 20g 

Parsley leaves 10g

Thyme 1g

Bay leaf 0.5g

Added and combine in the pressure cooker with beef soup and oxtail with 1 bar for 2hour and half hour. Let it strain and cool it down. Release the vaccum seal and refrigerator for preserve.


Layer of stock in gastronomy

Beef stock 500g

10g Gelatin x 6 sheets

1 star anise

1/4 shredded carrot with heavy cream 

Let 200g beef stock and anise simmer for 5 to 10 minutes, added bloomed gelatin. Add other of 300g stock and divide between 6 wine glasses.

Put in refrigerator for at least 4 hours to reserve. 

Serve with blended carrot whipped heavy cream into layers and final touches with a star anise.


Frozen Champagne with flute glasses


280g Champagne

200g elderflower syrup

100g mineral water

20g orange juice

20g lemon juice

14g gelatin x 8 sheets 

60g egg white


Bloom gelatin in orange juice and heat slightly till dissolves. Combine other ingredients to mix it well. Finish off with egg white and use the whipper machine and use 2 nitrous oxide chargers at least 2 hours for cool it to reserve. Dispense into liquid nitrogen and put them to serve. It is non-toxic and not flammable. 

What is Liquid nitrogen?

Liquid nitrogen (LN) is liquefied nitrogen gas, that would build up 3-quarters of air than we breathe. We drink is a chemical as H2O and have to concern safety instructions. 

At -196 Celsius, it might cause you suffering from a nasty cold burn and if you ingest it, the results could be catastrophic. Please don't serve drinks that contains any cryogenic materials. 

LN in the bilateral eyes could blind you, please take alert on that and let the clouds of liquid nitrogen vapor emanating from them and avoid to ruining the digestion systems.


LN2 could make the Leidenfrost effect, which mean it boils rapidly and surrounds surfaces with insulating layer of nitrogen gas. Usually we used for many cooling and cryogenic appliances or machines for freezing and transport of food products. This is the another molecular gastronomy preparation of unusual foods and beverages, flowers or ice cream. Please use it in the safety with caution.
