Receipes
4 oysters
4 mini sweet tomatos
1 spoon lime juice
1 tea spoon wasabi powder
Blender mixture
30 g oregano + olive oil puree
20 g minced vodka + red pepper
10 g honey
30 g coconut puree
10 g Tabasco sauce
1 g tara gum (1.0%)
Sepia ink mix
50 g fresh sepia ink
0.5 g methylcellulose (1.0%)
Mix the blender mixture with the tara gum. Sieve. Keep fresh during 1 hour. Mix the sepia ink with the methylcellulose. Keep in the fridge Peel the sweet tomato. Cut into small pieces (5 mm) but discard the white parts. Mix the wasabi together with the tomato pieces. Open the oysters. On a plate put a spoon of tomato pieces. On top the tomato. Put a drop of sepia ink and a spoon of mixture next to the oyster.
Oregano or thyme contains of antibacteria ingredient, that is carvacrol. Why we are using some herbs for cooking?
